Falafel

The falafel are one of the favorite Arabic food and a very much integral to the Middle Eastern cuisine. It is eaten as it is, as a snack. Or served in a pita bread along with salad and tahini . For those of you who haven't heard of what a falafel is, it is pretty much similar to the masala vada recipe. Except this easy falafel recipe is made with the chickpeas or the chana.

Homemade hummus is very easy to make and it tastes much better than anything you can buy at the store. If you don’t have any tahini, a paste made from sesame seeds, you can try making it yourself . (A chickpea purée) without it is still quite delicious. Just add more olive oil . Another option is to use a natural unsweetened creamy peanut butter in its place.

Moutabal/baba ghanoush

Baba ghanoush, is a Levantine dish of mashed cooked eggplant mixed with tahina (made from sesame seeds), olive oil, and various seasonings. The traditional preparation method is for the eggplant to be baked or broiled over an open flame before peeling, so that the pulp is soft and has a smoky taste. It is a typical meze (starter), often eaten as a dip with khubz or pita bread, and is sometimes added to other dishes.
