POTATO PATTIES
Ingredients:
*Two tablespoons of cheese
*A cup of breadcrumbs
*An egg
*Some thyme
*A teaspoon of cummin
*A pinch of salt
*A pinch of parsley
PROCESS:
First,grate the boiled potatoes.Second,add a cup of breadcrumbs,an egg,some thyme,a teaspoon of cummin,a pinch of salt,two tablespoons of cheese,a pinch of parsley.
Shape the mixture like a finger.Finally,fry them in hot oil.ENJOY IT.

A Cheese Fondue: Mıhlama
Ingredients/TRABZON STYLE
3 cups of cold water
1/2 teaspoon of salt
2 tablespoons of butter
1 cup corn-starch
1 cup Trabzon string cheese* or Kashkaval cheese (if you are not in Turkey, or can’t find these cheese, use Cheddar or Oaxaca

INSTRUCTION:
Melt the butter in a pan.Add corn-starch to the pan and fry it with the butter for a while.
After butter is melted in a good way, add some cold water in it. Cold water is the key term here.
Put your cheese in the pan. (Minzi or İmansız cheese may be added if you are in Turkey and if you are available to find these kind of cheese).
When it starts to boil,stop stirring. Just watch your Mıhlama and wait it to bubble. This means that it is the correct time when you see butter onto the food.
Leave it from the oven and serve hot.
ENJOY IT.
SİMİT
Dough
3½ teaspoon active dry yeast
Pinch of sugar
¼ cup warm water
4 cups unbleached all-purpose flour
1¼ teaspoon salt
About 1 cup lukewarm water
2 tablespoons molasses
1 cup water
Topping
2-3 cups sesame seeds
Dissolve the yeast and sugar in ¼ cup warm water and let stand 10 minutes in a warm place until frothy.
Mix flour, yeast mixture, salt and water.
Knead at least 15 minutes by hand, or 10 minutes by heavy-duty mixer, until the dough is very smooth and springy.
Put the dough in a buttered bowl, cover with plastic wrap, and let rise 2 hours.
Knead the dough a few times on a lightly floured work surface, roll into a log, and divide into 12 equal pieces.
Roll each piece into a tight ball and let rest under a slightly damp towel about 30 minutes.
Roll each ball into a 14 inch long rope.
Hold down one end of the rope with one hand while twisting it with the other.
Then form this twisted rope into ring, pressing and rolling the overlapping ends together on the work surface with one hand to seal.
Dip each “simit” in molasses water first, then in the sesame seeds, making sure the “simit” is completely and thickly coated with the seeds on all sides.
Put it back on the baking sheet and let rest for 30 minutes.
Preheat the oven to 550°F 30 minutes before baking.
Put a few cups of water in an ovenproof pan and place it in the oven.Take each ring and rotate it gently through your hands, enlarging it into a 7 inch circle.
Place the rings back on the baking sheet and let rest for 15 minutes or until well puffed.
Bake about 15-20 minutes until rich golden brown in color.They are their best eaten fresh out of the oven. They will be good all day. ENJOY IT!

TURKISH FRIED BREAD (PISI)
Ingredients:makes (15 breads)
320 gr all purpose flour
225 ml lukewarm water
1 tbsp dry yeast
1,5 tsp salt
2 tbsp oil for your hands
METHOD
1. In a large mixing bowl, mix the flour and salt. Make a well in the center of the flour mixture, add the yeast and water. First,dissolve the yeast.Knead until a smooth and elastic dough begins to form. Grease the bowl with oil, place the dough, cover and let sit for about 1 hour or until doubled in size.
2. Heat a large pot oil. Divide dough into mandarin size balls. Well your fingers in oil. Flatten each dough out with your fingers. Fry both sides until golden brown for about 2-3 minutes over medium heat. Repeat with remaining dough.

Borshch Ingredients:
1 carrot
4 beetroots
1 onion
2 chicken fillets
5 potatoes
2 tablespoons of tomato paste
1/2 cabbage
black ground pepper – to taste
fresh parsley – to taste
salt – to taste
For cooking Ukrainian borshch you:
1.Wash chicken and put it to boil for half an hour.
2.Cut carrots.
3.Chop the onion.
4.Fry carrots and onions in oil.
5.Cut beet into strips and fry it in oil.
6.Add some tomato paste, mix and cook for 8 minutes.
7.Chop the cabbage and cut the potatoes.
8.Add potatoes into the boiling broth. Add salt and cabbage ,cook them for 5 minutes.
9.Then add the pieces of beet and cook for 10 minutes.
10.Add the onion , carrot and cook. Add the garlic and bay leaf.

Process :
1.Mix flour ,eggs , water and salt , make dough.
2.Boil potatoes ,add some fried onion ,salt.
3 .Roll out the dough in the shape of a big circle, make small circuses out of the dough , by using a cup.
4. Put filling inside.
5.Boil vareniky for 3-5 minutes.
6. Put vareniky in a bowl.
7.Mix with the rest of the fried onion.
8.Serve hot with sour cream.

Process :

Deruny – Ukrainian Potato Pancakes
Ingredients :
1 onion

1 tablespoon of sour cream
1teaspoon of salt and pepper
some oil.
Process :
Take big bowl, grate potatoes and onion .
Add flour, egg, sour cream and mix it well.
Add 1tsp of salt and some black pepper .
Heat a pan with 2-3 tablespoons of oil over medium / high heat.
Add 1 tablespoon of the mixture at a time to the pan on one side until golden brown.
Flip over to the other side and fry for the same amount of time.
Serve deruny warm, they are best with sour cream, enjoy.

The Ingredients
1 onion
2 Green Peppers
2 Tomatoes
2 Eggs
1/2 Teaspoon of salt
1/2 Teaspoon of black pepper powder
1/2 Tea glass of olive oil

The Process
First chop the onion and peppers then peel the tomatoes and cut them into cubes.
Put the pan on the cooker and add the olive oil, onion and peppers. Stir for 5 minutes.
Add the tomatoes and cook until the tomatoes soften and loses some of their juice.
Next, beat the eggs in a bowl then pour it into the pan.
Add salt and pepper,stir them up and cook them for a couple of minutes.
Serve it hot with bread.
Have a nice appetite.
THE EGGED BREAD
The Ingredients
3 eggs
1 teaspoon of salt
1/2 teaspoon of black pepper powder
1/2 teaspoon of thyme
1/2 teaspoon of chili pepper powder
1 tea glass of olive oil
5-6 slices of bread

The Process
Put the eggs, salt, black pepper powder, chili pepper powder and thyme into a bowl and whisk them.
Then stick both sides of the bread slices into the mixture.
Heat the pan with some oil and fry the both sides of the egged bread slices.
Serve it hot with tomato.

Ingredients
2 eggs
2 glasses of milk
2 glasses of flour
1/2 teaspoon of salt
1/2 teaspoon of sugar
1/2 tea glass of oil or butter
1 packet of baking powder

The Process
Put the eggs, milk, salt, sugar and whisk them.
Add the floor and the baking powder and whisk again.
Heat the pan with little oil and pour a table spoon of mixture in a pan.
Cook it for 1-2 minutes on each side.
Serve it with chocolate, honey or jam whatever you want.

VEGGIE OMELETTE
The Ingredients
3 eggs
1 red pepper
2 green peppers
1 potato
1/4 bunch of parsley
1 teaspoon of salt
2 table spoon of oil and some butter

The Process
Peel and chop the potato, the green and red peppers.
Cut down the parsley into small pieces.
Put the oil into the pan and heat it.
Then add the peppers, potato and cook for 2-3 minutes.
Whisk the eggs, salt and parsley in a bowl and pour this mixture into the pan.
Cook both sides for 2-3 minutes.
Serve it hot.
Enjoy it.
SAC BÖREĞİ
The Ingredients
4-5 thin sheets of dough
1/2 kg spinach
1 bunch of stinger
1/2 kg leek
1 glass of olive oil
1 tea spoon of salt
1 tea spoon of red pepper powder
The Process
First select the spinach, stinger and leek then wash them 2-3 times.
Cut them down into small pieces.
Add salt and red pepper powder and mix them.
Take the sheets of dough one by one and sprinkle the vegetable mixture in each dough and give a shape.
Heat the pan with little oil and cook the both sides of the dough carefully.
Grease both sides.
Serve it hot with yoghurt.
Have a nice appetite.

AÇMA;
turkish style soft bagels
INGREDIENTS
- A cup of warm milk
- Half cup of warm water
- Half cup of oil
- 50 gr soft butter
- A packet of instant yeast
- 1 table spoon salt and sugar
- 2 eggs
- flour
- sesame seeds
the process
In a medium mixing bowl, combine warm milk,water, sugar and yeast together. Stir oil, butter, salt, egg whites in milk mixture and gradually add flour . Knead the dough for 10 minutes and let it rise for a few hours in a warm place.
Grab 2 pieces at a time dough approximately as big as a golf ball. Give them thin and long shape like a snake by rolling. Twist them together and stick the edges together to make them round like ring. Beat egg yolks and brush bagels with that.
Sprinkle black and white sesame seeds. Place them in a lightly greased cookie sheet and pop them to 180 degrees pre-heated oven for 25 minutes.

SUCUKLU YUMURTA;
eGGS WITH SUJUK
INGREDIENTS
- 3 eggs
- 10 slices of sujuk
- a pinch of salt
- a pinch of paprika
the process
Cook sujuk slices over low heat in a pan until they release the fat and turn a little golden brown.
Turn each side with a fork, do not overcook (2-3 minutes is sufficient). Make some room for the eggs and then crack the eggs.
Sprinkle some salt and paprika. Cook till the whites are cooked.
Serve warm.
Eggs with Sujuk is good to go at breakfast and brunch.

- 2.5 cups of flour

- 150 gr regular ground beef
- 1 grated onion
- chopped parsley

- 2 teaspoon vinegar
- 5 tablespoon water
For cooking;
- 2 cups vegetable oil
INGREDIENTS
THE PROCESS
Combine flour, water and salt in a large bowl and mix them well. After you make the dough; close it and rest about 20 minutes.
Combine the ground beef, grated onion, salt, ground black pepper, parsley leaves, vinegar and water.
Take a piece of dough and roll it.
Take 1 spoon of filling mix and spread it on to the half side of the dough. Close the dough and seal it by pressing with a fork.
Heat vegetable oil in pan and put the half-moon shaped dough in it. Cook them until the both sides have golden color.

TOAST WITH FRIED MEAT
INGREDIENTS
- 2 slices of toast bread
- 5 slices of cheddar cheese
- 50 grams fried meat
- butter

Heat the toaster.
Take the toast bread and put 3 slices of cheddar cheese on it.
Place the fried meat on the top of the cheddar.
Put the remaining 2 slices of cheddar on top and finally toast the bread.
Close the toaster cover.Spread butter on the bread close to baking and serve it hot.

tomatoes wıth thyme and cheddar cheese
INGREDIENTS
2 large tomatoes
Grated cheddar cheese
2 cloves of garlic
Thyme
Chili Peppers
Liquid oil
Salt
PROCESS:
Wash the tomatoes, cut them into rings.
Put the oil in the pan and put the tomatoes in it.
Put the chopped garlic between them.
Fry tomatoes on both sides.
Sprinkle some thyme, paprika and salt. Sprinkle grated cheddar cheese on top and cover it.
Cook until the cheddars melt.
