Once upon a time there was a goose who owned a passel o' people, a couple oinkers, and a dozen cows. The goose had everything he could ever want. He was fed more than enough, got to mate every season, and never had to lift a feather. He even had lots of animal friends- that he ate!

This wasn't any ordinary goose- he was carnivorous! With his teeth like razor blades, he could chew through the toughest meat. His human friends shared their meat with him.


What Jared didn't know was that most geese didn't eat meat and their humans ate them instead! The humans on the goose's farm butchered and processed all of their own meat. But they didn't really have any experience or training and they didn't know how hard it would be to prepare the meat without it getting diseases.











I sure hope our meat doesn't get listeria monocytogenes, clostridium botulinum, or some other risky disease.
Don't worry! I'll teach you everything you need to know about meat processing. Butchering cows is the easy part. After that the meat needs to be cut up and cured.

Jared taught George and Janice everything they could know about making their own meat. But they still needed a bit of help.
Jared later graduated from high school and moved away from his family. Now they don't have anyone to show them the ways of meat processing. They'll have to do it all on their own from now on.

It's okay. We already know how to keep our meat safe. We just clean out equipment and store the meat properly. It must be the proper temperature. Salmonella is caused by poop getting in contact with the meat. E. Coli is from the already contaminated cattle.
